Today was “my fridge is too full, we need to eat all the leftovers” day. So my dinner was the leftover sticky asian chicken that no one else in my family liked. In fact they disliked it so much that both my husband and my daughter gagged on it. But I loved it and thought that is was so delicious (I modified this recipe so that I didn’t deep fry my chicken and I would make it again in a heartbeat). So I finished the chicken with rice and spinach (YUM) and they had the leftover meatballs. I have been craving spinach and other green veggies the past week and so the spinach really hit the spot. I have a whole bunch more for tomorrow, I look forward to eating a large plate of it and possibly a smoothie as well. My fridge is much emptier now and it makes me smile!
